How do you know if your scoby has gone bad?
If you check on your scoby and see that it’s turned black, then the scoby has died. The best practice is to throw it away and any batch of tea that was made using it. A dead scoby does not necessarily mean that you did something wrong. Remember, it’s a living organism and has a lifespan.
Can a scoby get too old?
Although the SCOBY microorganisms are reproducing, they’re also aging and dying off. Over time, the average age of the colony goes up. Eventually, however, your SCOBY will probably get too old to effectively ferment the sweetened tea, and you’ll need to throw it away and start using a younger SCOBY.
How do you store a scoby for a week?
Store your Scoby in a small glass jar or a clean plastic bag. If you want to take a break in between your brews, you can refrigerate your Scoby in a clean, air-tight container. Use a glass jar or a fresh plastic bag to house your Scoby temporarily.

Yes. You can start a new batch immediately after the first one is done. Repeatedly. As long as you keep the scoby supplied with fresh sweet tea and appropriate room temperature, it will keep chugging away.
Can you touch scoby with bare hands?
When working with your scoby, make sure you have thoroughly washed your hands prior to touching the scoby. When you are working on a batch, or are transferring scoby’s to a hotel, do not leave the the scoby jar unattended without a cover. If you need to leave the brew area, cover the jar.
How do you revive an old scoby?
The simplest way to fix that is to run it through a coffee filter. Now that you have both the scoby and the starter liquid ready for action, all that’s left is to make a batch of sweet tea. Don’t use anything fancy here because it will only get in the way. Brew with cheap bags of black tea and regular old table sugar.
Should a scoby sink or float?
The short answer is no! Fortunately, a sinking mother SCOBY is not at all something to worry about. For now, you should know that your mother SCOBY can sink, float at the top, float sideways in the middle—it doesn’t matter what position they are in. In fact, they will likely move throughout the brew!
Can I put two SCOBYs in my kombucha?
To keep things simple, we generally recommend adding both SCOBYs to your next batch. However, once you have several SCOBYs, you can consider starting a SCOBY Hotel. With the SCOBYs removed from your brewing container, it is time to remove the remainder of the Kombucha from the container.

Why is my kombucha so sour?
When kombucha ferments for longer, it becomes more acidic. This is because the yeast in the SCOBY eat the sugars and tannins in your kombucha, transforming them into ethanol. The bacteria feed on this ethanol, turning it into acidity and giving kombucha its distinctively tart taste.
How long can you leave a scoby out?
There is nothing perishable in a scoby so there is no need for it to ever be refrigerated. Simply store your scoby at room temperature for up to 4 weeks. Keep away from any direct sources of heat (radiators etc) and out of direct sunlight.
Can I cut a scoby in half?
You can safely cut a SCOBY in half. Just make sure your scissors or knife are completely clean before you handle it to avoid contamination. The next batch you brew with the cut SCOBY will grow a new SCOBY to grow across the top, as always.
What if I forgot to refrigerate my kombucha?
When kombucha is left out of the fridge and it continues to ferment, the flavor may change to be more sour and less sweet. It may also increase the carbonation and pressure inside the bottle. Or just keep it in the fridge until you are ready to drink it.
